So a certain fast food establishment makes a very popular breakfast sandwich called the Egg McMuffin®. If you order this sandwich, you receive an English muffin topped with a slice of cheese, a fried egg and a slice of Canadian Bacon (read: ham-like substance). What they DON'T tell you is that the magic lies in its half-brother, the Sausage McMuffin with Egg®. Technically, this is not an Egg McMuffin®, It's a muffin and sausage with egg added. I know, it's very confusing at 10:00am in the morning for me as well. So to forego all this nonsense, just stay at home and make one yourself. It's ready in about 10 minutes, and you don't even have to put on your pants.
Sausage & Egg Muffin
Prep Time: 2 min.
Cook Time: 10 min.
Ingredients
- Bob Evans® brand Pork Sausage Patties in a tube (VERY IMPORTANT)
- 1 egg
- 1 slice of (any) cheese, American preferred
- 1 Thomas® English Muffin (important, but not as important as the sausage)
- 1 pat of butter
- pepper
Directions
- Using a sharp knife, line up the tube of sausage to cut off 1 regular-sized patty, about 1/2 in. in length. Now double that, and cut off 1 in. of sausage. Trust me.
- On a plate/cutting board, mash the sausage down with the back side of a rounded fork/spoon until it's about 5-6 in. in diameter and about 1/4 in. thick. You want a patty that measures about 1 in. wider than your English muffin.
- In a small skillet, carefully place the thin, wide patty on medium heat. No oil is needed, as there is enough fat in the sausage to cook it naked. Pants are recommended for you at this stage, though. No one wants to feel spitting hot grease this early in the morning.
- Cook the sausage patty for about 5-8 minutes, flipping it every minute. Perfect sausage cooking requires constant movement and attention.
- Using the smallest skillet you have, heat 1 pat of butter on a low heat. If you don't have a small skillet, try making a ring out of aluminum foil, 4 inches in diameter. If you have a large onion or green pepper, cut a 1/2 inch slice and use it as an egg border. A dry piece of bread with the insides removed can work as well. You can also buy a single egg pan, which is recommended, because after making this at home, you will want to make them every day.
- Crack 1 egg into your skillet/bread ring/foil mess/onion border/pepper perimeter. Again, the trick is to fry an egg that will be contained on your English muffin. As soon as you crack the egg, take a knife and lightly 'tap' the yolk to break it. You want to cook the yolk so that it doesn't run out of the sandwich, down your arm, and onto the pants that you're now wearing. Glad I made you put your pants back on now, huh?
- Cook the egg for about 1-2 minutes. Add pepper to taste.
- Toast the English muffin. You want to start cooking the egg and toasting the muffin at about the same time, with about 3 minutes of sausage cooking time left.
- When the English muffin pops up, immediately cover the bottom half with your cheese. Don't let the sides of the cheese flop over the edge of the English muffin, because they will become soft and fall off the sandwich. Tear the cheese into pieces, and carefully place them so they are contained in the muffin's 'nooks' and 'crannies'.
- Place the cooked sausage on top, then add the fried egg. Place the other half of the English muffin on top.
